Mix it Up: Blueberry Muffins

My family is a crazy cooking family.. so naturally when you find great recipes, it is in good form to share share share with all those you want to know about the amazing foodies you love. So, with that, I saw this recipe on LAKE JANE and if she says they are hands down the best blueberry muffins then it is my duty to share it with you all!

BLUEBERRY MUFFINS

Ingredients
- 2 1/2 cups flour
- 3/4 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 egg
- 1 cup yogurt (plain or flavoured - i used blueberry flavoured)
- 1/4 cup melted butter
- 2 cups blueberries (fresh or frozen - thawed)
- optional topping: 1/4 cup brown sugar + 1/2 tsp cinnamon.

Directions
Preheat the oven to 400 degrees. Combine the dry ingredients and wet separately, add the wet to the dry, then add the blueberries last (the dough is very pasty). Bake for 15 - 20 minutes and insert a toothpick to make sure they are cooked through... makes 12 big or 24 mini!
