Silky Touch

Get flowered up with these adorable creations from the Etsy shop B Poetic. Most of her flowered designs are made from vintage silk, adding an extra special touch to these shoe clips and headbands. The shoe clips would be a sweet touch to add to a bride's or even the bridesmaid's shoes.

Mix it Up: Chicken Tequila Fettuccine

Chicken Tequila Fettuccine
Adapted from CPK
Serves 4
*See my notes below

Ingredients
- 1 pound dry spinach fettuccine (or 2 pounds fresh)*
- 1/2 cup chopped fresh cilantro (2 tablespoons reserved for garnish)
- 2 tablespoons minced fresh garlic
- 2 tablespoons minced jalapeno pepper (remove seeds and veins for a mild flavor)*
- 3 tablespoons unsalted butter (reserve 1 tablespoon for saute)
- 1/2 cup chicken stock
- 2 tablespoons gold tequila
- 2 tablespoons freshly squeezed lime juice*
- 3 tablespoons soy sauce
- 1 1/4 pounds chicken breast, diced 3/4 inch
- 1/4 medium red onion, thinly sliced*
- 1/2 medium red bell pepper, thinly sliced*
- 1/2 medium yellow bell pepper, thinly sliced*
- 1/2 medium green bell pepper, thinly sliced*
- 1 1/2 cups heavy cream*

Directions
Prepare pasta in boiling, salted water until al dente, 10 to 12 minutes for dry pasta, approximately 3 minutes for fresh. Pasta may be cooked slightly ahead of time, rinsed and oiled and then reheated in boiling water or cooked to coincide with the finishing of the sauce.
Cook 1/3 cup cilantro, garlic and jalapeno in 2 tablespoons butter over medium heat for 4 - 5 minutes. Add stock, tequila and lime juice. Bring the mixture to a boil and cook until reduced to a paste like consistency and set aside.
Pour soy sauce over diced chicken and set aside for at least 5 minutes.
Meanwhile cook onion and peppers, stirring occasionally, with remaining butter over medium heat. When the vegetables have wilted but still has a crunch, add the chicken and soy sauce. Toss and add reserved tequila-lime paste and cream. Bring the sauce to a boil and continue to boil gently until chicken is cooked through and sauce is thick, about 3 - 5 minutes.
When sauce is done, either toss with well-drained spinach fettuccine and reserved cilantro to serve family style. Or spoon over pasta portions, evenly distributing chicken and vegetables.

*My notes from adapting this recipe:
When I reviewed this recipe, many many people commented that it called for way too much pasta. My suggestion is to either double your sauce, or use less pasta depending on how many people you intend to serve to create a balance.
Now for the jalapenos, my suggestion is that if you want some good spice, but not an overwhelming kick - keep the seeds and veins of the jalapenos and simply add more lime juice. The two tastes really balance out the flavor, and tastes amazing.
Veggies. I love love love veggies. So with this recipe I used 1/2 a red onion, and used the entire bell pepper for the red, green and yellow peppers. It was the perfect amount.
As for the heavy cream, I used regular creme to keep it lighter. The consistency of the sauce was great, and I'm even considering using another alternative the next time I make this.

Given that my bestie was just asked to be the Maid of Honor for one of her close friends up and coming wedding, weddings are definitely on the brain - as well as wedding inspirational blogs. So here are my Hump Dave Faves:
This Southern Weddings blog is jam packed full of some seriously amazing weddings, with ultimate creative ideas, and genuinely sweet stories. They really know how to throw a wedding down South!
This adorable wedding blog creates the best boards of inspiration! Everything from centerpieces, bouquets, color combinations, you name it - they bring it all together so you can see the big picture of how much you can do with even the simplest palette of colors.
Once Wed offers a fresh collection of exquisite photos documenting even the finest details of some truly inspiring weddings. What's awesome is that almost every wedding posted, includes links to the vendors or brands of all the big details of the weddings including coordinators, florists, photographers, caterers, rentals, attire, you name it - it's there. So when you see something you like, it's that easy to find it for your future wedding.
This is my guilty pleasure of some seriously edgy and envelope pushing weddings - not to mention a ton of amazing ideas that you wouldn't usually see in any plain-'ol wedding. I love the diversity of classic and rough edges. These brides have completely made their weddings unique to the max.
This is something I like to check in with every now and again. They have a lot of great tips and advice for topics that at times seem common sense, but can get pretty difficult when actually faced with making the decision. This blog is full of great tips any bride could find handy.

2010, Here I Come!

Now that 2010 is finally here, I have chosen my resolutions/goals/missions - whatever you want to call them.
So here they are:
- Simplify my life. Couldn't get any broader, I know. What I mean is basically getting and staying organized everywhere in my life. Letting go of the unnecessary and holding on to the essentials. Become stable in all areas of my life.
- Be healthy. This last year was a pretty challenging year. I graduated, went through extreme ups and downs in my relationships with family and friends, been on the hunt for a job in my field... and amongst all the hustle and bustle I simply stopped looking out for myself and lost my good habits of eating well and working out.
- Switch from alcohol to water. I'm not saying I won't be drinking this year - just not often, and I will be making certain I drink more water. Water is clean and fresh and makes me feel so balanced.
- Strengthen my relationships. This year I want to make more time for all of my friendships, so they can continue to grow. I'd love for all of them to come closer together this year. Just committing to making the time - it's that simple.
- Have some adventures. There are so many places I've been wanting to visit, day trips I'd love to take, restaurants I want to try, things I want to experience. This year, I'm going to make them happen.
- Complete a scrapbook. I've started so many scrapbooks, and either never finish them, or when I'm nearing the end I just kind of slack off and then I'm not proud with the final product. This year, I want to complete one wholeheartedly.
- Finish my cookbook. My friend Amy and I started compiling recipes we love to use, and can't wait to try. I really want for us to get that going, and maybe even grow it beyond our palettes.
- Grow this blog. I love blogging. It hasn't even been a year yet, but I've decided I love it and would find it very satisfying to have it become much more over the next year.
